Fresh Thinking: Cooking seasonally with sustainable ingredients sourced from local farms. The Indian Tandoori class is offered as part of the 21 Acres School.

Master the knack of Northern Indian Punjabi-style foods without a traditional tandoor. Chicken marinated in yogurt and tandoori spices is finger-licking good on the grill – or baked in the oven- especially if wrapped in a puffy naan bread. Come learn how to make your own spice blends to create a wonderful fresh-air supper inspired by our Northwest harvest and scented with spices from India. Our menu will include tandoori chicken, flavored naan bread, fresh herb chutney, garbanzo bean curry with tomatoes and a spiced spinach side dish.

Veena Prasad is a food blogger, cooking instructor and spice master. She is passionate about making it easy to cook authentic, fresh and healthy Indian food.
Ms Prasad is the founder of Veena’s Market, a Seattle based business that helps people cook Indian food at home. The online market makes available recipe kits with spices, teas, and gourmet salts with global flavors. On her blog, http://blog.veenasmarket.com/ she shares recipes and step by step photos for making regional dishes you would not find in an Indian restaurant and has tips for newbies to Indian cooking.
